Camp Location

THE FRENCH ALPS - Haute-Savoie Region
Our camper will spend their holiday in a typical mountain chalet in the center of the village of Châtel (located between Lake Genevaand Mount Blanc).

Lodging : Our typical chalet built in 1970, 3 storey high and fully remodeled, offers rooms 4 to 6 beds (116 beds total) with shower facilities in each bedroom. A large dining-room with a view on the mountains, 4 activity rooms. It is located only a few minutes away from the center of the village.

Châtel is a typical Savoyard village with a long farming tradition. During their camp session our campers live among “the locals” who continuously share with them their knowledge of the local fauna and flora, as well as the traditions of this beautiful region of France, particularly its farming and culinary traditions.

Activities

1. COOKING WORKSHOP on Traditional Cuisine :

Children will travel back in time as they discover the culinary and pastoral heritage of the “Valley of Abundance”

Making butter:
Using the cream from the milk of the cows of Abundance our campers will discover the principle of “emulsification”. Making butter is remarkably easy and very satisfying!

Making and baking bread:
Mix salt, water and flour, introduce the yeast and experiment the principle of “fermentation” …

Cooking with dairy products:
Learn how from tiny small animals and bacteria act on the milk and transform its texture to produce delicious cheese and yoghurts!

Cooking Jams:
First pick some blueberries in the forest…then add natural additives (lemon juice, pips of apple) in the preparation of the jam and you will obtain jelly, syrup, or the semi liquid jam, so easy!

Gourmet recipes using the famous cheese of Abundance:
The children, with the cheese they will first collect from a 12 kg grindstone, will prepare traditional dishes from the Valley of Abundance: “the Berthoud”, the “Croûte Campagnarde” (Rustic Crust) or the famous “Cheese Fondue”, delicious!

2. MOLECULAR COOKING :

A real journey to the future… discovering new textures and new tastes, studying the chemical changes that food undergoes during preparation.

Molecular gastronomy is a new science, will actually study the chemistry and physics behind the preparation of every dish and we will see how physics and chemistry can change cooking!


" Gels à Gogo ":
From mysterious red seaweed, the children will experiment the principle of “capturing water” to transform almost any food in gel.  They will make cubes of peas, dark chocolate cannelloni’s or even salmon candies! They will also use a process called Spherification, (it is the process of creating a gelatinous membrane to encase a sphere of liquid).

" Disintegrated Spaghettis and Disordered Pearls":
It is this time from brown seaweed and by using a syringe (without needle!) that the children will make surprising walnut spaghettis, thyme spaghettis or even cheese spaghettis that will come alive move in every direction! Finally magically they will watch chocolate caviar or blackberry pearls be born in front of their own eyes!

“Unpredictable Molecules ":
A delicious foaming shampoo that tastes like melon, it is melon! Tomato butter, or chocolate mousse made without egg and without cream: yes it is possible! That’s called the principle of the stabilized emulsification!

“Bubbles, bubbles and more bubbles ":
Bubbles everywhere! In a lollipop, in a blueberry cake…our campers will create a real geyser by putting in contact a Menthos (candy) with Coke (Coca-cola)!

Choice of Field Trips:

DISCOVERY OF THE CULINARY AND PASTORAL HERITAGE OF THE REGION

Discovery of the mountain flora and collection of edible plants (wild thyme, St.-John's wort, alpine rumex…),
Visit of a local farm: venture to milk a cow and to participate in the manufacturing of the famous cheese of Abundance,
Visit to the Cultural Center of the Val d' Abundance: studying the cows of Abundance, the transhumance, and the various stages of the manufacturing of the cheese,
Meeting with a beekeeper: discovery of the beekeeping activity followed by a tasting of various local honeys.

Activities will be scheduled (programmed) according to the wishes of the children and the propositions of the teaching staff.

- Visit if the City of Thonon-les-Bains (literally, Thonon-the-Baths) a picturesque French spa town located on the south shore of Lake Geneva.

- Shopping in Châtel and Thonon-les-Bains;

- Picninc on the shores of Lake Geneva (also called Lake Leman), located half in France and half in Switzerland, this is the largest natural freshwater lake in western Europe (582 km²) . Relaxing near the lake beneath the French Alps helps bring home the full grandeur of the setting!
